Potato Sausage

An old German recipe which mixes pork and potatoes. Both the German and Swedish versions of this sausage can be made in a ring or rope casing. We make the potato sausage in 1 pound rings.

This sausage dates back to Europe when potatoes were used by a wide variety of people to extend the amount of food they had. By adding potatoes to the sausage it allowed for more meat at the dinner table.
